Little Gem Wedge Salad

With Candied Pecans & A Yoghurt Beetroot Dressing

Serves 4

A beautiful, summer salad, brimming with freshness and colour. Delicate and bold at the same time, its mouthwatering textures and flavours make this a unique, special dish. Highly nutritious and balanced, yet low in fat and calories, it takes only a few minutes to put together, yet will surely impress!

Ingredients

For the candied pecans

100g raw pecan halves

1tbsp maple syrup

A pinch of sweet paprika

A pinch of salt

For the dressing

125g unsweetened plant based yoghurt, preferably greek style

2tbsp low fat vegan mayonnaise

1tbsp chopped cooked beetroot

1tsp maple syrup or honey

1tsp onion powder

2tbsp pickle juice from the gherkin jar (or lemon juice or white vinegar)

A pinch of salt

For the little gem wedge salad

4 little gem lettuce heads, cut in wedges

4 cooked beetroot, finely chopped

A handful of white seedless grapes

4 small gherkins, finely chopped

4 spring onions, finely sliced

1 shallot, peeled & finely sliced

1tbsp fresh chives, finely chopped

Method

For the pecans, preheat the oven to 180C.

Place them in a bowl with the rest of the ingredients and mix well to coat.

Arrange them in a single layer on a lined baking tray and place in the oven for 8 minutes. Set aside to let them cool and crisp up.

For the dressing, place all ingredients in a food processor and blend until well incorporated and smooth. Check the seasoning and adjust if desired.

To assemble the salad, arrange the little gem wedges on a serving platter. Scatter the rest of the ingredients all over and drizzle with the prepared dressing. Enjoy!

Notes

If you are short of time, you can skip roasting the pecans. If fact, you can use any nuts or seeds you have to hand, to give a crunch to this salad.

An alternative way to serve this salad, is to chop up the little gem lettuce heads and toss through the dressing and other ingredients. However, we think the wedges are a wonderful way to present and elevate this dish.
