Luscious Orange Pudding Cake

Serves 8-10

Vegetarian / Dairy Free / Gluten Free

One of our all time favourite desserts! This orange pudding cake is so marvellously moist and decadent, yet healthier than most. With whole oranges, ground almonds and organic eggs used as the main ingredients, this delicious cake is also both gluten and dairy free. Even though cooking time is longer than some, it is actually a very simple recipe to prepare. Especially beautiful enjoyed warm, straight out of the oven!

Ingredients

2 organic, medium whole oranges (about 400g+)

6 large organic pasture raised eggs

250g golden sugar plus 1tbsp for the tin

250g almond flour (finely ground almonds)

60g organic butter (use plant based for dairy free)

1tsp baking powder

1tsp salt

3-4tbsp flaked almonds

Some icing sugar and orange zest for serving

Method

Wash the oranges well and place them in a pan filled with water, enough to almost cover them. Bring to a boil and then simmer for 1 hour. Drain the water and allow the oranges to cool slightly. Cut them in half and remove any pips from the centre. Place them in a food processor and purée till very smooth.

Preheat the oven to 180C.

Lightly grease and line a 20-23cm round springform tin. Lightly sprinkle 1tbsp of the sugar to coat the base and sides.

In a large bowl or a mixer, beat the eggs with the sugar till they are white and fluffy. Add the butter, ground almonds, baking powder and salt and blend well. Finally, blend in the orange purée. The batter should be quite thin and easy to pour into the prepared tin.

Cover the top with the flaked almonds and bake in the middle of the oven for about 90 minutes, until a skewer comes out clean.

Allow to cool slightly before removing from the tin.

Sprinkle lightly with some icing sugar and orange zest.

Serve warm, or at room temperature.

Notes

Although orange peel is usually discarded, it contains higher amounts of vitamin C, fibre, polyphenols and antioxidants than the inner fruit. Eaten raw, it can taste bitter, but prepared in this recipe, it actually enhances the aroma of the orange flavour and adds moistness to the cake.

Almond flour is made of ground blanched almonds. It is an incredibly nutritious food, rich in vitamin E and magnesium. It has a low glycemic index and is naturally gluten free.

Studies show it helps lower bad cholesterol and high blood pressure.

This cake can be stored in an airtight container for 3-4 days.
