Fresh Banana Loaf

Makes 8-10 Slices

A quick and easy way to have a delicious healthy treat. Made with simple wholesome ingredients and putting those over-ripe bananas to good use, this loaf is fresh, moist, light, fragrant and will instantly delight. Serve it warm or cold with your favourite spread, jam, fresh fruit, or on its own. We guarantee you will love it and as it is guilt free, it may well become a fast staple in your home.

Ingredients

4 large ripe bananas, peeled

70ml maple syrup

50ml rapeseed oil

1tsp orange blossom extract (or vanilla extract)

400g self-raising flour - (we use a mixture of 200g unbleached white & 200g brown)

A pinch of salt

100g dark chocolate chips, plus extra for topping, (optional)

Method

Preheat the oven to 170C. 

Line a loaf tin with baking paper.

In a food processor blend well the bananas, maple syrup, rapeseed oil and extract. 

Add the flour and salt and blend until just incorporated. The batter will be thick and gooey.

If using, add the chocolate chips and pulse very briefly to distribute them throughout the mixture. Pour into the prepared tin and top with a few extra chocolate chips. Loosely cover with baking paper or foil.

Bake in the middle of the oven for 45 minutes, then remove the cover and continue to bake for a further 10 minutes.

Take out of the oven and allow to cool on a rack before removing from the tin.

Serve and enjoy!

Notes

Feel free to add a few of your favourite nuts, seeds and raisins or sultanas in the mixture. Once cooled, you can also glaze this loaf with a simple sugar icing, chocolate ganache, or any other topping you fancy.

This loaf will keep in an airtight container for a few days. It can also be sliced and placed in the freezer for up to a month.
