Mango Porridge

With Goji Berries, Pecans & Black Sesame Seeds

One of the things that is so wonderful about porridge, is how versatile it can be. It is a blank canvas on which we can splash whatever colours and flavours we can think of. Although there is nothing like a warm bowl of porridge in the morning, it may be enjoyed as a simple supper on occasion, too. Here, it is combined with some diced juicy ripe mango, dried goji berries, pecan nut pieces, a sprinkle of black sesame seeds, hemp seeds and linseeds and a tiny drizzle of maple syrup. Divine!

Ingredients

30g small leaf porridge oats*

160ml plant based milk

A tiny pinch of salt

1/2 a fresh ripe mango

1tsp dried goji berries

3-4 pecan nuts, crumbled

1/2tsp black sesame seeds

1tsp hemp seeds

1tsp linseeds

A tiny drizzle of maple syrup

Method

Place the oats, pinch of salt and milk in a small saucepan and cook over low-medium heat, stirring continuously, until oats are soft and milk is absorbed, creating a creamy consistency. With small leaf oats, this takes 3-4 minutes. Pour into a bowl.

Peal and dice the mango and place on top of the porridge, then sprinkle the goji berries, the pecan nuts and all the different seeds over the mango. Finally, drizzle with the maple syrup and enjoy.

* You can use any type of oats you like, but you may need to cook the porridge for longer if using jumbo or steel cut oats. You can also use buckwheat, quinoa, or any other grain you prefer.

Notes

Goji berries, otherwise known as wolfberries, are little nutritional power gems. Fat free, low in calories and ultra rich in antioxidants. They help fight disease, they aid digestion, they increase energy levels, athletic performance, quality of sleep and ability to focus and they significantly reduce fatigue, stress and depression. Very high in vitamins A, C, B2, rich in selenium, potassium, iron and calcium, containing 18 amino acids of which 11 are essential and a great source of unsaturated fatty acids and phytochemicals. They truly are a superfood!

As for black sesame seeds, they are also a very powerful health food. High in dietary fibre, magnesium, iron, B6 vitamin and very high in calcium. They are proven to have anti-ageing properties, decrease the risk of cancer, aid constipation and indigestion, stabilise blood pressure and strengthen bones.

Mangoes are my favourite fruit. I could eat them every day in every possible way and never tire of them. Apart from their sweetness and tropical flavour, mangoes deliver over 20 different minerals and vitamins, making them one of the healthiest fruits to eat!

Because they are so sweet and succulent, they can satisfy sweet cravings, replacing unhealthy processed foods.
