Marvellous Cashew Hot Chocolate

Imagine a hot chocolate that is utterly decadent, chocolatey, thick, creamy and comforting, just like a warm fluffy blanket, but one that is also highly nutritious, refined sugar free and good for you…Well we have created it right here for you! This is simply the best hot chocolate we have ever tasted!

Ingredients

For the hot chocolate:

60g raw cashews

8 pitted dates

30g raw cacao powder

250ml coconut milk (we use Koko Super 9 you may use any plant based milk)

125ml hot water

50ml maple syrup

A pinch of salt

A pinch of cinnamon

To serve:

100ml coconut milk, warmed and frothed

A little cacao powder for dusting


Method

Without a high speed blender:

Place the cashews and the dates in a small saucepan and cover them with water. Bring to a boil and simmer for 15 minutes, until they are soft.

Drain the cashews and dates and place them in a blender with all the rest of the ingredients.

Blend mixture until very smooth and creamy. Return to the saucepan and heat through before serving.

With a vitamix or other high speed blender:

Place all ingredients in your blender and blend for 5 minutes until hot and creamy.

- To serve -

Warm and froth up 100ml of coconut milk, either in a milk frother, or in a saucepan using a whisk.

Pour the hot chocolate in mugs or heatproof glasses and top with the warm frothed milk. Dust with a little cacao powder and dive in.

Enjoy!

Notes

For warmer months, this can easily be served chilled, with cold frothed milk on top. If you fancy, instead of the milk, dollop a scoop of vanilla ice cream in each glass and enjoy as a heavenly chocolate milkshake.
